Nacho Scramble Wrap

"Got this from a Kraft What's Cooking magazine and tried it out because it is ridiculously simple and extremely quick for those hectic mornings around the house when you'd like a little something more than cold cereal. Posting in response to a request for quick breakfast ideas for those very mornings! Kinda tasty for being SO crazy easy!"

  • Spray a small microwavable cup or bowl with cooking spray(I use a ramekin).
  • Add egg, beat with a fork.
  • Microwave on HIGH for 30 seconds.
  • Add salsa and cheese.
  • Return to microwave and zap an additional 30 seconds or until egg is completely set.
  • Spoon cooked egg onto tortilla.
  • (I sometimes spoon on a little extra salsa and cheese and add a dollop of sour cream).
  • Roll to create wrap!

  1. I make this often, except I usually just scramble the egg & salsa in a small skillet since eggs scramble so quickly. I love that 'bite' of something spicy with the eggs and mellow cheese. If I have leftover veggies like mushrooms or onions or peppers, I'll add those too. All in all, a quick & tasty breakfast :)
     
  2. Very quick and easy... just what I like in a breakfast recipe! I only had flour tortillas in the house, so that's what I used. I also chopped a precooked sausage patty and stirred it in after the egg was done cooking. A nice breakfast- thanks for posting!

About me....well...let's see,right now I am a married, stay-at-home Mom to two beautiful children, a 10 year old daughter and a 7 year old son....they are the "lights" of my life, which I think I pretty much spent waiting for them! I feel so very lucky (and truly blessed) to be their "Mommy". I don't know that I have a fave cookbook, (and I have rarely opened one of the many I have, since finding Zaar.) I just LOVE recipes and have been "acquiring" them since I was a teenager! Actually I think I bought my first cookbook in like grade two or three, a cookie recipe book from one of those scholastic book orders!
