I always make this frosting for my Carrots and Beets Cake. Together, they make the most wonderful and so rich in savor cake as well as a conversation piece. The cake is one of the most precious recipes I have since it comes from my grandmother.

I'm so glad I found your recipe. I used it on an applesauce cake and it came out great. I used my own applesauce and its was much thicker than store bought. I loved the slightly tart taste and the calories that were saved by cutting out all the butter that my usual frosting recipe calls for. I think this would be great on carrot cake. Thanks for posting.
