Mushroom-Swiss-Bacon Loaves

"I found this recipe on a website called Showcase Minnesota. We are meatloaf fans, and this is a different combination we can't wait to try."

  • Preheat oven to 350 degrees.
  • In large skillet, cook bacon until crisp. Remove with slotted spoon to drain. Discard all but on 1 T drippings. Add mushrooms, onions, and dry mustard. Cook until tender, stirring often, for 5-7 minutes. Stir in Worcestershire sauce. Cool to room temperature.
  • In large bowl combine eggs, milk, 1 1/2 C cheese, and cornflake crumbs; mix well. Add ground beef and sausage, salt and pepper. Gently mix until combined. Mix in mushroom mixture and all but 1/4 C bacon. Mix well.
  • Divide mixture into 6 portions and place on rimmed baking sheet. Bake for 25 minutes. Remove from oven and sprinkle remaining cheese and bacon over. Return to oven and bake additional 5 minutes.
