- 1⁄2 lb raclette cheese
- 12 new potatoes
- 3⁄4 lb cooked sausage, of your favorite variety
- 1 fennel bulb, trimmed and sliced
- cornichon
- crusty French bread
directions
- Preheat oven to 350°F.
- Boil potatoes until tender, drain.
- Thinly slice Raclette and place even amounts into three ovenproof ramekins.
- Place the sausages in a baking dish.
- Cook sausages and cheese at the same time, for about 10 minutes.
- Slice the sausages into coin-shaped pieces.
- Serve on dinner plates with melted cheese in the middle surrounded by piles of sausage, potatoes, fennel, and cornichons, along with a basket of sliced bread.

Yummy! Yummy! When I moved to France, Raclette quickly became one of my favorite winter meals! It's also very good with quail's eggs (the shells are really tough to break, though!), and some also like it with tomatoes. I think making a Raclette in the oven, as this recipe suggests, is a good idea, because the table-top Raclette appliances tend to heat up the dining room a little too much!

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village.
