- 1 1⁄4 cups sugar
- 1⁄2 cup all-purpose flour
- 1⁄4 teaspoon salt
- 9 tablespoons hershey's cocoa powder
- 3 cups milk
- 4 egg yolks
- 6 tablespoons butter
- 1 1⁄2 teaspoons vanilla
- 4 egg whites
- 3⁄4 teaspoon vanilla
- 1 dash cream of tartar
- 1⁄2 cup sugar
- 1 (9 inch) baked pie shells
directions
- in med saucepan, mix 1 1/4 cups sugar, flour, salt and cocoa.
- gradually add milk.
- cook and stir over med heat till thick and bubbly.
- reduce heat.
- cook and stir 2 minutes more.
- remove from heat.
- beat egg yolks lightly.
- gradually stir 1 cup of hot mixture into yolks, then stir egg mixture into saucepan.
- bring to a gentel boil, cook at stir 2 minutes more.
- remove from heat.
- stir in butter and vanilla.
- cover and cool with plastic wrap touch the surface - to keep a skin from forming.
- meanwhile, beat egg whites with vanilla and cream of tartar until soft peaks form. continue to beat, gradually adding 1/2 c sugar until stiff peaks form.
- pour chocolate filling into pre-baked pie shell. cover with meringue, sealing edges.
- bake at 350 for 12-15 minutes.
