Mom's Fluffy Pancakes

As requested, a pancake made with beaten egg whites. I'm guessing at the yield.

These pancakes were delicious and fluffy. I made a double batch to serve with ice-cream and maple syrup. I would say the yield is about right! Thanks.

  1. Measure flour into mixing bowl.
  2. Add sugar, baking powder and salt.
  3. Stir well to blend.
  4. Combine beaten egg yolks, milk and butter in separate bowl.
  5. Add to blended dry ingredients.
  6. Beat with whisk until smooth.
  7. Fold in egg whites.
  8. Preheat no-stick pan to 350-375°F.
  9. Drop by 1/4 cupfuls.
  10. Cook until puffy and bubbly.
  11. Turn before bubbles break and cook other side.
  12. Serve with butter and real maple syrup.
