Mom's Creamed Corn Fritters

"This is basically a corn pancake. We love these with lots of butter and sometimes syrup."

• Ingredients: 8
• Serves: 3

ingredients

• 453.59 g can creamed corn
• 473.18 ml flour
• 59.14 ml sugar
• 14.79 ml baking powder
• 3 eggs
• 9.85 ml vanilla
• 78.78 ml oil
• 473.18 ml milk

directions

1. Mix together.
2. You may need a little more flour. Butter skillet heavily then make like pancakes; brown on both sides.

These are definitely great tasting fritters, & so easy to make, too! Already I'm thinking of making them much smaller (for finger food) & serving them at one of the next monthly groups I host! Yum! I made a double batch of these tonight, and threw in some chopped green peppers into the batter...I prepared the batter them in two seperate bowls, as I was not certain about adding in 2 Tbsp baking powder. I actually made them late in the afternoon, and just stuck them in my air convection oven to crisp up for dinner, they were just delicious! What a great recipe Dienia, we really enjoyed them, thanks for posting!....Kittencal:)
