Suitable for low carb, diabetic and even everybody else (who will be surprised how delicious this is!)
- 5 slices bacon or 5 slices turkey bacon, cooked crisp and crumbled
- 1 cup chopped celery
- 2 scallions, sliced
- 4 small radishes, sliced
- 3 hard-cooked eggs, peeled and chopped
- 1 cup chopped fat-free cheddar cheese
- 12 ounces extra firm tofu, cubed (one box)
- 2 dill pickle spears, chopped
- 1 tablespoon Dijon mustard
- 1⁄2 cup fat-free mayonnaise
- 1⁄4 cup sour cream
- 1⁄4 cup toasted sliced almonds or 1⁄4 cup toasted sunflower seeds
- 3⁄4 teaspoon salt
- 1⁄2 teaspoon pepper
- Mix everything except tofu together until it is mixed well.
- Gently fold in tofu until it is coated.
- Chill 1-2 hours before serving.
