Mistertommy's Most Excellent Southwestern Chipotle Chicken

- 4 boneless skinless chicken breasts
- 1 cup Italian dressing
- 3 minced garlic cloves
- 8 slices monterey jack cheese
- 1 cup chipotle salsa
- fresh cilantro
directions
- Place chicken breasts, garlic and Italian dressing in a plastic bag. Seal tight and marinate 1 hour in refrigerator.
- Heat a grill to medium high.
- Place 1 cup, or more if desired, of the salsa in a small sauce pan and heat slowly. Just want it warmed.
- Remove the chicken from the marinade. Discard marinade.
- Oil the grill and cook the chicken breasts, basting with some Italian dressing to keep the meat moist. Turn often until well browned.
- When the chicken breasts are ready, place 2 slices (or only 1 if desired) on each breast. Close the grill top and let the cheese soften about 1 minute or so.
- Remove chicken breasts to plate. To serve, place a breast on a plate and spoon some of the salsa over the top. Garnish with fresh cilantro.
- Is great with Sangria and for a different taste, place black bean and corn relish in the bottom of a plate and serve this on top.
- *Note* There are many good salsa recipes on the web. I actually use a well known brand sold in all grocery stores. (Pace).
