  • 2 tablespoons Bourbon
  • 14 cup finely chopped fresh mint, plus more (to garnish)
  • 1 tablespoon sugar
  • 1 medium pineapple, about 2 Lbs, extra sweet, trimmed, cored, cut crosswise into 1/8 slices

  • Mix ingredients, allow 20 minutes for flavors to develop. Can keep in fridge overnight.
