  1. Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine mango, oil, egg, milk, rum and extracts; add liquid mixture to dry ingredients, stirring just until dry ingredients are moistened.
  2. Spoon batter into miniature muffin pans coated with cooking spray, filling ¾ full. Bake at 350 degrees for 10 to 12 minutes or until golden. Remove from pans, and let cool slightly on a wire rack.

These muffins just really lacked a certain "something". More mango- more sweetness, more of anything. However- i really really appreciate the healthful additions of the whole wheat flour, wheat germ, and minimal use of added fats. With a bit of tweaking, (,aybe honey for sweetness and grated ginger for zing) this recipe could be wonderful. A good start.
