Mini Potato Zucchini Kugels

  1. Preheat oven to 400 degrees F.
  2. Spray two 12-cup muffin tins with nonstick cooking spray.
  3. Peel potatoes.
  4. Grate potatoes and place immediately in ice cold water to keep from darkening.
  5. Grate zucchini and onion separately from potatoes.
  6. Mix eggs, salt, pepper, and flour.
  7. Strain liquid from potatoes and squeeze excess liquid using cheesecloth.
  8. Add potatoes, zucchini, and onion to egg mixture and mix to combine all ingredients thoroughly.
  9. Evenly distribute mixture into muffin cups.
  10. Bake 40-45 minutes until golden brown outside.
