Middle Eastern Chicken Kebabs in Honey-Soy Marinade

"The delicious honey-soy marinade with the garlic makes them special. You could try adding cherry tomatoes or mushrooms. Or use shrimps instead and add pineapple. If you don't grill them too hot you can put the veggies and meat on the same skewers without burning the veggies."

  • In a bowl mix oil, honey, soy sauce, cumin, cayenne and pepper. Set a small amount of the marinade aside for basting later on. Then add the meat, veggies and garlic and let them marinate in the fridge for at least 2 hours. The longer the better.
  • Discard the marinade and put meat and veggies onto skewers. If you use wooden ones, first soak them in lemon water to prevent burning.
  • Grill on the BBQ for 12-15 minutes or until done. Keepturning and basting with the marinade you set aside earlier.

  2. This is going in my tried and true recipes. I made it for a BBQ... marinated both chicken and vegetables separately.... everyone loved it. My vegetarian sister was especially grateful. :)

  4. Great stuff! Love the sweet/salty flavors of the soy and honey! Only thing I did different was to put the veggies and the chicken on seperate skewers--that way each can cook for the perfect doneness! I'm thinking we'll try this with pork next! thanx for posting!
     
  5. So, so, soooooo good!! We loved them! I followed the recipe, as is - cayenne and all - and it was perfect. Marinated for 4 hrs. I wouldn't change a thing. My 1.5 year old couldn't get enough of the chicken!

I grew up in Germany but my background is German/Spanish/Irish/Native American. I would say my cooking style is a mix of all of them. I like to cook simple clean food. I usually don't use any packaged or processed products. Most of the time I make everything from scratch. I use only organic meat and dairy products and many other organic products and I believe it makes a big difference not only healthwise but also in taste. We have two kids. A 3 year old and a 9 year old. I try not to adapt the food for them too much. They are used to eating what we eat. Growing up I didn't really learn how to cook. At least I didn't care enough to remember anything.But living centrally in Germany I was able to travel and eat European food in it's respective Countries: Italian food in Italy, Spanish food in Spain, French food in France and so on. I really missed that when I moved to the States. I started cooking the week after I got married and have been cooking and teaching myself ever since. Now cooking is not only one of my two hobbies (photography being the other one)but I also see it as therapy. It calms me down after a stressful day, it cheers me up when I feel down and it helps me center my thoughts when I have a lot on my mind. :) Thank you so much to whoever gave me the gift of premium membership.
