Microwave Omelet

"This is probably the fastest, easiest omelet you will ever make. It almost doesn't even deserve to be called a "recipe," since it's more of a method than anything else! Of course, you can use any type of egg substitute or real eggs; you can also add any type of vegetables, if you'd like! You might want to add salt and pepper to taste, based upon whatever you add to the eggs. I used hot chunky salsa, and I felt that was enough flavor for me."

  • Spray a microwave-safe plate with nonstick spray.
  • Pour All Whites into the plate and stir in salsa. Microwave on high for 3-5 minutes, depending on how well-done you like your eggs.

  1. What a quick and no fuss way to make an omelette. I left the salsa out, and added cheese. Cooked a double serving with a little melted butter in a large flat bowl for 5 or 6 minutes. A definite do again meal.
     
  2. Good and easy to make. I made this at work for myself for a nice breakfast. I think I would like it better with some cheddar cheese on it.

  5. On a low carb diet, I have been eating yogurt and meal replacement bars for breakfast until I was blue in the face...This recipe is awesome!! I added carb free baby spinach and weight watchers cheese, I will jump out of bed tomorrow for this!!

I also struggle with anorexia, and so most of the recipes I create or try are low-calorie and fat-free. I do love to bake, though, and I'm able to do that for others right now, which is nice. I also keep kosher; that, combined with the fact that I don't really eat meat or cheese, means that most of my recipes (or recipes that I try) are non-dairy and vegetarian, or can be easily adapted to suit that. Kitchen gadgets are a horrible weakness of mine ... it is just so much fun to try out crazy new products that sometimes I can't help myself! Limited kitchen storage space has managed to sort of curtail that little habit.
