I came up with this by using different recipes for similar recipes. It is a nice dinner. Fast, easy, cheap and healthy! I ran this through recipe builder on Weight Watchers this is 3 points per serving.

  1. Mix ground beef (cook first if not previously cooked), fat free refried beans, tomato sauce, 1 cup water, 1 teaspoons cumin, 1 teaspoons garlic powder, 1 Tbl. chili powder, 1 teaspoons onion powder, & 1/4 teaspoons ground red pepper.
  2. Simmer until beans have "melted" stir in the pepper jack cheese.
  3. Cut corn tortillas into quarters.
  4. Spray bottom of 9X13 baking dish with PAM.
  5. Layer 1/3 of tortillas on bottom.
  6. Spoon 1/3 of meat, bean, & tomato sauce mixture. Repeat.
  7. Sprinkle reduced fat cheddar on top of last layer.
  8. Bake covered at 400* for 30 minutes.

Very tasty weeknight meal when you need something quick. I used ground turkey and a packet of taco seasoning instead of the individual spices.

I loved it! I also used a can of chopped fire roasted tomatoes on top of the layers and veggie ground beef. I will be making this again and soon. Thank you!

This was quick, easy, and tasty! I added a bit more spice, thinking it would be a bit bland and that was a good call for my family. And I used fresh garlic instead since it was easy to throw in with the cooking ground beef. I might make more sauce next time as it would have covered three layers of the tortillas better. Overall, this was good and I will make it again.
