This recipe is adapted from my book entitled "Raw Food and Hot Yoga" which is available on my website at It uses the best of summer produce to create a refreshing and mouthwatering salad that can be used as a main course or side dish. Spruce it up with extra veggies and spices as desired.

  1. Shave the kernels off the corn cob with a sharp knife into a bowl and toss thoroughly with remaining ingredients. Refrigerate until serving.
