- 3 eggs
- 1⁄4 cup heavy whipping cream
- 1⁄4 of a avocado
- 1⁄4 of an onion (chopped)
- 4 pieces bacon
- 1⁄4 cup cheddar cheese
- 2 tablespoons sour cream
directions
- Whisk the eggs and heavy whipping cream until well blended.
- Fry bacon and let cool.
- Cut avocado into small pieces.
- Chop onion.
- Tear cooled bacon into small pieces.
- Shred cheese.
- Pour egg mixture into hot skillet. Add bacon, avocado and onions.
- Cook until half way done.
- Add cheese.
- Top with sour cream.
