  • 2 cups crushed tortilla chips
  • 2 cups shredded Mexican blend cheese
  • 1 1 cup shredded pork or 1 cup roast chicken
  • 1 1 cup chopped green onions or 1 cup leftover cooked vegetables
  • 28 ounces mild green enchilada sauce

  • Mix together all ingredients until well blended.
  • Pack into a baking dish and pop into the oven for about an hour.
