- 1 1⁄2 lbs lean ground beef
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 (14 1/2 ounce) can diced tomatoes
- 2 cloves garlic, minced
- 2 (15 1/2 ounce) cans trappey black-eyed peas (1 with jalapenos and 1 without)
- salt
- pepper
directions
- Brown beef, onion, & pepper together; drain grease.
- Add rest of ingredients and mix well.
- Simmer on low for 30 minutes.

Talk about down home country fixins -- this dish hits the mark! Being from Texas, I grew up on country food and this dish is great as a side or as a main course with a veggie. I used rotele vs. the regular tomatoes as the recipe mentioned and we loved it!!! I will definitely be making this dish again. Made for PAC, 2011. Thanks for the post.
