  • Sift together cornstarch, sugar and flour.
  • Blend vanilla and butter into dry ingredients until a soft dough is formed.
  • If dough is too soft to work with refrigerate until a better consistency, 10-20 minutes.
  • Shape dough into 1/2" balls.
  • Roll balls in coconut and place on an ungreased cookie sheet about 1" apart.
  • Bake at 300F for 20-25 minutes until golden brown.

  2. First attempt i couldn't make the dough work, would not bind together, 2nd attempt same issue, increased butter to 1.5 cups. Mixing took quite a while (30 minutes) until dry ingredients binded from crumble, glad i didn't give up on mixing, 2 failed attempts would have really upset !! The cookies are more similar to a sugar cookie, didn't melt in your mouth even though butter was increased. Overall quite good, not as awesome as I had hoped they would be.

  4. Really good! I made them this evening and the dough looked so tempting that I couldn't stop myself from nibbling on a little. The second a little piece of dough went into my mouth, I just knew that once done, these would turn out marvellous, and, they DID! I substituted the butter with margarine and the cornstarch with cornflour and halved the recipe. As I like my cookies big, I made about 21 of them only. But, these are really nice. I followed your instrcutions on step 3, and refrigerated the dough for 30 minutes as I had time on my hand. Also, I added some of the coconut in the dough and left some for rolling the cookies in before baking them. I'd like to end my review by saying that you've really titled these so aptly, by calling them, "Melting Moments", they really melt in your mouth and, that moment, is one to cherish forever, IMHO! Thank YOU for this A+++++ recipe!
     
  5. These turned out well, kind of like a butter or sugar cookie, but they were a bit plain for us. The coconut coating did add something to it. Maybe Charishma's idea of adding coconut to the dough? I followed the recipe exactly, but they were not really "melt-in-your-mouth."
