  • Cook the vegetable burger patty as desired.
  • Then combine the tomato, cucumber, spinach, Feta, vinegar, oil, and pepper.
  • Toss.
  • Spoon the salad mixture into the pita.
  • Crumble the vegetable burger on top.
  • Note you can use a vegan sub cheese for the feta if desired.

  1. wow! I threw this together in minutes and it was awesome! I eyeballed the ingredients and was really happy with the results. I used Boca Burgers, added fresh basil (try it!!) and left out the cucumber since I didn't have any. The red wine vinegar really adds to the flavor. Thanks so much for posting, I'll be making this again soon =)

  3. I hope I don't offend the poster of this fabulous recipe, but I made it non vegetarian by making a greek turkey burger in place of the veggie one!! I didn't use any vinegar or tomato, added some oregano, minced garlic & red onion. The feta was a great touch; I used reduced fat. I am trying to get more spinach into my diet & this was a delicious way to do it. I used an organic whole wheat tortilla, too. A great light dinner. Thank you so much for sharing!
