Matzos Sponge Cake (For Passover)

"This is the recipe that my mother in law has been making for years to make a wonderful sponge cake to enjoy during passover. Its yummy and very good with strawberries."

  • 8 eggs, separated
  • 1 12 cups sugar
  • 1 cup sifted matzos cake crumbs
  • salt
  • 12 lemon, grated rind and juice

directions

  • Preheat oven to 350 F, a moderate oven.
  • Beat yolks until light.
  • add sugar and beat again then add a pinch of salt, the lemon, then the matzos cake meal.
  • lastly fold in the whites beaten until stiff but not dry.
  • Bake in 10 inch spring form 45 minutes or in two layers. We use don't use a spring form pan but we use a tube pan or bundt.
  • Enjoy!

I like to cook and I have been using recipezaar for about 5 years to find great recipes. I just didn't maintain an account. (acutally I have one but I've forgoten the password and no longer have that email). But I have a husband and two kids my DD is 2 and my DS was born Feb 09.
