This recipe was created by my sister who was on the atkins diet, but was craving mashed potatoes. It is also really good for kids who don't like to eat there veggies.

  1. Cut Cauliflower into small pieces and add to boiling water in a large sauce pan. Add Salt to water and cook Until Soft and mushy. Drain water and pit cauliflower back into saucepan add butter and milk (heat milk in microwave for 30 seconds). Mash all ingredients together. Use a mixer if you have one.

VERY, VERY GOOD TASTING side dish! I like cauliflower anyway, & this is a great variation of what we usually have! I'd like to go on, now, & perhaps make a mashed potato/cauliflower combo, half & half! Anyway, your simple recipe is great & definitely a keeper! Thanks for sharing it!
