- 6 cups rolled oats
- 1 cup chopped walnuts
- 1⁄2 cup wheat germ
- 1⁄2 cup unsweetened coconut
- 1⁄4 cup sunflower seeds
- 1 1⁄2 teaspoons ground saigon cinnamon
- 1⁄2 teaspoon ground allspice
- 2⁄3 cup pure maple syrup (or less)
- 1⁄2 cup olive oil
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon maple extract
directions
- Combine dry ingredients in large baking dish.
- Add wet ingredients and stir until completely combined.
- Bake at 350 degrees for 30 minutes, stirring every 10 minutes.

Very simple, and very good... I scaled the recipe down to make 3 servings since I didn't have enough of all the ingredients and it was just me eating it anyway. I also replaced the wheat germ with flaxseeds, due to dietary preferences. It worked out fine, but I think I should have reduced the baking time for such a small batch; it came out tasting a little burned, although it was fine in appearance. I will experiment with the cook time, because this is so easy and good that is is worth trying again. Thanks for sharing!
