Marinated Barbecued Chicken

"I got this recipe from the Aug/Sept 2004 issue of Light and Tasty. This is a fast, easy and tasty grilled chicken recipe. Just throw it all together the night before and then grill the following evening. Couldn't be easier!! Prep time does not include marinating time."

  • In a bowl, combine the first seven ingredients.
  • Pour 1-1/2 cups marinade into a large resealable plastic bag; add the chicken.
  • Seal bag and turn to coat; refrigerate overnight.
  • Cover and refrigerate remaining marinade.
  • Coat grill rack with nonstick cooking spray before starting the grill.
  • Drain and discard marinade from chicken.
  • Add barbecue sauce to remaining marinade.
  • Grill chicken, covered, over indirect heat for 35-50 minutes or until meat thermometer reads 170 degrees Fahrenheit, turning and basting occasionally with marinade.
  • Before serving, brush with remaining marinade.

  3. This is my favorite grilled chicken! I don't change a thing and that is very rare for me! Comes out perfect everytime. I use Sweet Baby Ray's for the barbecue sauce.
     
  4. Howdy! I have to agree wholeheartedly with Nancy (aka Lvs2Cook) that this chicken is fabulous...and I have tried zillions of ways to prepare chix. Also, and this is VERY UNUSUAL for me, I DID NOT CHANGE A THING!!! (I did halve the recipe for only 3 breasts, but that doesn't count.) This is now my all-time favorite way for chix breasts, followed closely by Tandori-style with yogurt based marinade. I'm still experimenting with those, plus I have yet to spring those on DH so vote is still out. For now - these RULE!!! Thank you so much. :)
     
  5. This chicken is great! I made as posted except that I left the barbecue sauce out of the marinade because I forgot it (sorry about that!) I also havled the recipe since I was only grilling 3 breast halves. I will definately be making this again ~ thanks for posting!
