An easy puddinglike Indian dessert.

  1. Peel and extract mango pulp from the ripe mangoes and sieve it.
  2. In a deep pan, cook mango pulp with equal quantity of water.
  3. Prepare sugar syrup (boil sugar with little water and boil until it is slightly thickened) and mix it with mango mixture while continuously stirring.
  4. Add milk to it. Mix well and keep it boiling until the mixture thickens. Decorate it with nuts and serve.

This tastes very good, but I had a little trouble with the preparation. I'm not sure if it is operator error or not, as I have never made kheer before. (I have enjoyed it many a time at the Indian restaurants, however!) I made about half the recipe. I used 1 mango (2/3 c of puree), 1/3 c sugar, and 1 1/2 c milk. I boiled it for 20 or 30 minutes and it never seemed to thicken. In desparation, I threw in a tablespoon of cornstarch. But I think you are supposed to mix that with a little water before adding it to something. I ended up with some little cornstarch dumplings. lol. Despite all that, the taste is very good!
