Mandelbread

"This is a delicious almond flavored biscotti-type cookie that is not overly sweet. It was my favorite as a child (grandma used to make them). God bless her--she made them by hand. I use a machine (a Cuisinart or a stand mixer) for mixing the rather stiff batter. If the dough is too sticky, lightly flour your hands to shape the loaves. Vary it the way you like, using chocolate chips instead of nuts. Enjoy with a cup of coffee!"

  • Preheat oven to 350 degrees F.
  • In a large bowl, beat butter until smooth. Gradually add sugar, then add eggs one at a time and beat well.
  • In another bowl, sift flour with baking powder. Add flour gradually to egg mixture. Add vanilla extract, almond extract and salt.
  • Beat well, add nuts and mix well.
  • Put on a well-greased cookie sheet in 2 loaves (about 2 1/2" by 12"). Bake about 25 minutes.
  • Cut crosswise into 1/2" slices and put in oven cut side down for about 10 minutes; turn and put back into oven for 10 minutes.

  1. Just finished making this recipe. Perfect amount of sweetness! The almond extract MAKES the difference, do not omit. I twice baked part of it as recommended, and the other part I left on the softer side, and sliced like bread and topped with dark chocolate. AWESOME! I recommend you try it!
