- 1 lb elbow macaroni
- 3 scallions
- 2 carrots
- 3 celery ribs
- 1⁄8 cup honey
- 1 tablespoon curry powder
- 1 1⁄2 cups mayonnaise
- 1 teaspoon sea salt
- 1 tablespoon fresh cracked pepper
- cook 1 pound elbow macaroni al dente in sea salt -- drain and rinse in cold water.
- in a large bowl -- add noodles, sea salt, fresh cracked pepper,juiliened carrots,celery, curry powder,honey, mayonnaise and scallions -- mix well.
- chill for 1 hour.
This was a quick and easy dish to make. The honey component added just the right amount of sweet and overall the dish is not spicy. I added one extra scallion and celery stick just to add a little more crunch and color otherwise this dish is perfect as is!!
