Low Carb Mashed Potatoes

Not quite mashed potatoes but pretty close ... especially with the addition of the chives.

  1. Peel potato and cut in 1/2 inch cubes.
  2. Add potato and cauliflower florets to saucepan.
  3. Cover potato and cauliflower with water and bring to a boil.
  4. Reduce to a simmer and cook until tender, about 15 minutes.
  5. Drain.
  6. Return pot to stove to remove excess water.
  7. Add buttermilk to the pan and mash/puree until smooth.
  8. Beat egg and slowly add to mixture, mixing constantly.
  9. Let the mixture sit with the lid on to make sure the egg cooks.
  10. Salt and pepper to taste.
  11. Sprinkle chives over the potatoes.
