My family usually makes this with full fat sour cream and while that's very good, what's the point of eating fruit if you cover it with fat? This is just as good and much healthier.
- 1 (16 ounce) container low-fat plain yogurt
- 1 -1 1⁄2 envelope sugar-free instant vanilla pudding mix
- Mix together.
- Let it sit for a few minutes to thicken.
- This can be made individually with just a little yogurt and the pudding mix to taste.
- Serve with fresh fruit.
I loved the end result of this, but think maybe the proportions are off which is why I am only rating a 4. I used fat free plain yogurt which usually has a major bite so I was worried. I only put in 1 box of pudding powder though and tasted and decided that it was _plenty_ sweet as it was. So I'm glad I did not add any more. For our taste, 1 box of sugar free fat free pudding to 2 cups of yogurt is the right proportion. I served this with apple slices and strawberries and it was well received by adults and kids. When the fruit was done we used pretzels and that was wonderful as well. Thanks for something I'll make over and over again.
Simple & delicious, just what I needed for something quick to take to a playgroup party with what I hadf on hand, served with banana, apple & strawbs.
I made this for my son with low-fat vanilla yogurt and fat-free chocolate pudding powder. He ate it for breakfast on its own this morning, and said it was "good". Trust me, from my son, this is high praise!
