Louisiana Cornbread

"Delicious cornbread with a veggie flair. Unexpected flavors blend to make this cornbread a wonderful meal in itself if you prefer. Compliments all foods that "plain" cornbread does."

ingredients

• 1 package Jiffy corn muffin mix
• 2 eggs
• 113.39 g cottage cheese
• 141.74 g chopped broccoli, fresh or defrosted
• 1 small onion, chopped fine
• 226.79 g margarine
• 7.39 ml oil

directions

1. Preheat oven to 400° F.
2. Blend ingredients together.
3. Let rest for 3 minutes.
4. Pour into 8 x 8 inch baking pan.
5. Bake at 400° for 20 to 25 minutes.
6. Serve hot.
