  1. Boil potato until tender.
  2. Drain. Peel. Rice.
  3. Stir in the caviar.
  4. Blend oil in with a mixer until smooth.
  5. Stir in lemon juice, yogurt and onion.
  6. Season.
  7. Serve with pita.
