- 10 egg yolks
- 2 1⁄4 cups heavy cream
- 3⁄4 cup milk
- 1 pinch salt
- 1⁄2 cup sugar
- 2 whole vanilla beans
- 1⁄2 cup sugar, for topping
directions
- split and scrape vanilla beans.
- dump cream, milk, sugar, salt, vanilla beans, and insides into a medium saucepan.
- cook over medium heat, whisking occasionally, for 10-15 minutes.
- set aside to cool.
- beat yolks until light.
- temper cream into egg yolks till approximately half of the cream is in the yolks.
- mix together.
- ladle into 4-6 oz ramekins.
- Place in deep baking dish with water to level of custard.
- bake at 300 for 1 hour or until set.
- cool and brulee.
