This is one of those recipes that I have been looking for forever!! You know those cookies at Wal-Mart, Publix (my grocery store), etc. that are soft cake-like sugar cookies with the buttercream icing spread on top with sprinkles? Well, this is the recipe for them!! I guess the 'name brand' of the cookies is Lofthouse? Anyhow, I'm making these soon- and I've heard a lot of hype about this recipe - so I'm really excited about them. Let me know how they turn out! FYI - Definitely use the FRENCH vanilla cake mix (and Pillsbury brand is reccomended)- I hear it is the closest to the 'real thing.'
- 1 (19 ounce) box French vanilla cake mix
- 1⁄3 cup vegetable oil
- 2 eggs
- 1 cup unsalted butter, softened
- 6 -8 cups powdered sugar
- 1⁄2 cup milk
- 2 teaspoons vanilla extract
- COOKIES: Preheat oven to 350*. Blend, cake mix, eggs, and oil until moistened. Roll into 1" balls. Place on ungreased cookie sheet. Flatten with a glass (but not too much, you want them to be 'fluffy').
- Bake for 6-8 minutes. Cool for 1 minute on pan before moving to a cooling rack.
- FROSTING: Place butter in a large bowl. Add 4 cups sugar and then milk and vanilla. Beat on medium speed until smooth and creamy, approx 3-5 minutes. Gradually add remaining sugar, 1 cup at a time beating well after each time, about 2 minutes, until the icing is thick enough to spread. Add food coloring if you'd like.
- While the cookies are still a little warm, spread on some buttercream frosting. Allow the frosting to set up before storing.
This is my go-to cookie recipe. People go nuts over these every time. I don't smush them down too much, and they stay semi-fluffy, not exactly like the brand name, but still very good. Some people have said these are better than the brand name! I use another frosting recipe, not this one. It is a crusting cream cheese buttercream, which allows me to pipe out decorations and letters. I make them with little footballs and helmets for our tailgates. : )

Tastewise these are pretty darned close to the real thing but it didn't hit the mark for me on texture. My cookies weren't fluffy at all actually and more resembled a traditional sugar cookie. I wonder if not smooshing the cookie down would help with this. Regardless, my husband used explicitives when telling me how good these cookies were so there ya go! Made soooooo much stinking frosting I think I threw away like a pound of it. I will definitely half next time.
I made these for the first time using Pillsbury Vanilla cake mix. I didn't make the homemade frosting, though, just used a can of Pillsbury frosting I had in the pantry. I couldn't believe how good they were. I took them to work to share and my husband packed them in his lunchbox all week and they were gone pretty quick. This is definitely a keeper in my recipe file and I will be making them again.
