My late MIL had a recipe for everything! Her chilled cucumber soup is unique with a slight taste of mint. Very refreshing on a hot summer day.
- Grate cucumbers and place in a colander to drain with the 1/2 tsp of salt for at least 30 minutes.
- Pour all ingredients into blender and blend until smooth.
- Pour into chilled soup tureen.
- Garnish with chopped mint.
- Serve very cold.
