- 1 1⁄2 cups matzo meal
- 6 tablespoons melted duck fat
- 6 table spoons sparkling water
- 1⁄2 teaspoon kosher salt
- 6 whole eggs
- 2 egg whites
directions
- Lightly beat whole eggs in a bowl.
- Add salt, melted duck fat and sparkling water to beaten whole eggs.
- Beat egg whites until soft peaks form.
- Measure matzoh meal and pour into large bowl.
- Add whole egg mixture to matzoh meal and stir until blended.
- Fold egg whites into matzoh meal mixture until all trace of white disappears.
- Cover bowl and place in refrigerator for 20 minutes.
- Bring four quarts of salted water to a boil.
- Form matzoh balls and drop gently into boiling water.
- Reduce heat to establish a gentle boil and boil matzoh balls for 35-40 minutes.
- Remove matzoh balls with slotted spoon and place in container if refrigerating overnight.
- Heat matzoh balls in microwave and place in soup bowel. Do not warm matzoh balls in soup pot as they may absorb too much soup.
