  • Lightly beat whole eggs in a bowl.
  • Add salt, melted duck fat and sparkling water to beaten whole eggs.
  • Beat egg whites until soft peaks form.
  • Measure matzoh meal and pour into large bowl.
  • Add whole egg mixture to matzoh meal and stir until blended.
  • Fold egg whites into matzoh meal mixture until all trace of white disappears.
  • Cover bowl and place in refrigerator for 20 minutes.
  • Bring four quarts of salted water to a boil.
  • Form matzoh balls and drop gently into boiling water.
  • Reduce heat to establish a gentle boil and boil matzoh balls for 35-40 minutes.
  • Remove matzoh balls with slotted spoon and place in container if refrigerating overnight.
  • Heat matzoh balls in microwave and place in soup bowel. Do not warm matzoh balls in soup pot as they may absorb too much soup.
  • Enjoy.
