Salad dressing can sabotage the natural goodness of your salad by coating it with calories and fat. Here is one healthy alternative to the store bought variety.
- 8 ounces soft tofu, drained and crumbled
- 1 cup tomato juice
- 1⁄2 cup lemon juice
- 1⁄2 teaspoon ground rosemary
- 1⁄2 teaspoon dried oregano
- In a blender, combine the tofu, tomatoe juice, lemon juice, rosemary and oregano.
- Blend at high speed until smooth, about 2 minutes Serve over salad.
