Lemon-Chicken Pasta Salad

- 1 (1 ounce) box Suddenly Salad Pasta Salad Mix, ranch and bacon pasta salad
- 1 cup mayonnaise
- 2 teaspoons grated lemon peel
- 2 tablespoons fresh lemon juice
- 2 cups cubed cooked chicken
- 1⁄2 cup almonds
directions
- Empty pasta mix into 3 qt saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
- Drain pasta; rinse with cold water. Shae to drain well.
- In large bowl, stir together seasoning mix, mayonnaise, lemon peel and lemon juice. Stir in pasta, chicken and almonds. Serve immediately, or refrigerate until serving.

First off, because of this recipe, I found a new-for-me product in the grocery store with this Suddenly Salad package, & must admit that it makes for a great tasting salad! My other half & I do like the taste of lemon, so this wasn't as intense for us as it might be for others! Thanks for posting the recipe! I am a stay at home mom to a very active teenager, and toddler. DH and I love to cook together in our way. I find the recipes, then I watch him cook them LOL

<br>My family picks on me constantly as I have a thing with raw meat, it really skeeves me out so I can not touch it, which makes cooking on my own a challenge.

<br>DH is in the Air Force and sadly will be leaving sometime the beginning of next year to go play in the sand for a year, so I am currently on the lookout for dishes I can cook on my own or with my teen easily and with minimal touching of raw meat.
