  1. Combine chicken and lemon juice.
  2. Marinate at least 6 hours or overnight, turning occasionally.
  3. Remove chicken, discard marinade, reserving 1 tablespoons.
  4. Combine flour, salt and pepper; dredge in flour (this step may be skipped).
  5. Heat oil in large skillet over medium-high heat, fry in several batches.
  6. Transfer to casserole large enough to hold chicken in single layer.
  7. Combine peel and brown sugar in bowl, sprinkle over chicken.
  8. Combine stock and 1 Tbsp reserved marinate, pour around chicken.
  9. Bake at 350°F 35-40 minutes.
  10. Good served hot, even better served cold.
