This is a good way to use up last night's leftovers.
- 2 tablespoons butter
- 1⁄2 potato, diced
- 2 eggs, whipped
- 1⁄2 cup meat, leftover your choice
- 1 hard roll, lightly buttered
- salt, to taste
- pepper, to taste
- In a fry pan,sautee diced potatoes in butter.
- Add the eggs and meat when potatoes are slightly browned.
- Add salt and pepper.
- Mix all together and cook until done.
- Fill the bun with cooked mixture and enjoy.
