Layered Reuben Spread

"The sandwich in a dish! If you prefer a "Rachel" to a "Reuben", substitute smoked or oven-roasted turkey for the corned beef in this spread."

  • 23 cup mayonnaise
  • 13 cup thousand island dressing
  • 1 (8 ounce) can sauerkraut, well drained
  • 8 ounces shredded swiss cheese (2 cups)
  • 1 (6 ounce) package thinly sliced corned beef, chopped
  • 2 tablespoons sliced green onions
  • assorted cracker (I like Rye Krisps, or can also use the small cocktail rye bread slices)

directions

  • Heat oven to350.
  • In small bowl, mix mayonnaise and dressing until well blended.
  • In ungreased 9 inch pie pan, layer sauerkraut, half the cheese, the corned beef and mayonnaise mixture. To remaining half of cheese, add onions and toss to mix. Sprinkle over top.
  • Bake 20 to 25 mimutes or until bubbly around edge.
  • Serve with crackers or cocktail bread slices.

This is a picture of me with my oldest grandson, DJ and was taken this past summer when we went on a cruise and land tour of Alaska. I am retired after working for the same company for 25 years. My husband is a retired military officer. After the military he started working for Lockheed and is now retired from there as well. We live in San Jose, CA and have lived in the same house for over 33 years. We have two grown children and 6 beautiful grandchildren. I love to try new recipes and jazz up old ones. Taste of Home and Southern Living are my favorite recipe magazines(I enjoy reading a little bit about the people who submit the recipes). Recipe Zaar is just an incredible site. I've made many new friends since joining.
