  1. Peel, wash and cube the potatoes.
  2. Pare and slice the onions.
  3. Place these two items into a stock pot and add the tomato sauce, oil, and fill with enough water (or broth) to cover them.
  4. Add the salt and pepper to taste and boil at moderate temperature for 30 minutes.

Found this to be just a tad bland until I added 1 teaspoon of "greek spices" (recipe can be found here). Since we like our soup thicker than most, I added more onion & potato the second time I fixed it. YUMMY! Thank you for sharing.
