Kraft One-Dish Italian Fish

  • 1 12 cups Minute Rice, uncooked
  • 14 cup water
  • 1 lb white fish fillet (halibut,cod,tilapia,pike,pickerel)
  • 1 (19 ounce) can diced tomatoes, undrained
  • 14 cup zesty Italian dressing
  • 12 cup four-cheese Italian cheese blend, shredded

directions

  • Mix rice and water in shallow microwaveable dish.
  • Arrange fish fillets in single layer over rice and pour tomatoes with the liquid and the dressing over fish. Cover loosely with plastic wrap, turn back one corner of plastic wrap to vent.
  • Microwave on High 8 minute Remove plastic wrap and sprinkle with cheese.
  • Cover loosely with plastic wrap, venting at one corner. Microwave an additional 4 minute or til fish flakes easily with fork and rice is tender.

  1. I love this recipe! Found it in a magazine, and was happy to see it here. I always season the fish with lemon pepper and italian seasoning, and add extra italian dressing to the rice and over the fish. A great fast dinner that tastes amazing!
     
  2. I made this for the Healthy Choices ABC game. I'm pretty happy with the results. I subbed brown rice, which was very good. I also used fat-free Italian dressing, which adds great flavor. I did add a little extra water for the rice, and left the tomatoes undrained. Next time, I will drain and rinse the tomatoes, because I don't love the juice. I think it tastes overpowering. I also halved the amount of cheese, and it was great! Thanks for such a good recipe, I will definitely make it again. YUM!

Update Nov 2009 - I live in Northwestern Ontario with the cold and the bugs. A baby born in each of my decade 20's 30's 40's!!! plus 2 grandsons now. I love to cook and hardly ever repeat a recipe. I never really had a fav cookbook but I now have a favorite recipe site that I am totally addicted to-RECIPEZAAR!!! I still email recipes to my own kids. My pet peeve is those folks who turn their noses up at a dish even before they try it. My family have sat at the table with a pig tail or a chicken foot on their plate just becuz I found a recipe - HAHAHa - cooking should be fun and very once in a while the dogs get a treat! I also love watching decorating shows and my husband keeps promising to put wheels on the furniture to make room arrangments easier! We don't hobby farm anymore on our 8 acres and the large veg garden has been made over - half rock garden and other half with 12 new raised cedar beds because I am getting old and the knees don't work so well. It is fabulous and will post a new cover pic altho I love my Inukshuks!! I LOVE snowshoeing and am blessed to be able to walk out my back door and enjoy.
