Knob Creek Grilling Glaze

- 1⁄2 head roasted garlic (I use my own recipe for Gooey Soft Baked Garlic posted on this site; just be sure not to use raw gar)
- 2⁄3 cup water
- 1 cup pineapple juice
- 4 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 1⁄3 cups brown sugar
- 3 tablespoons lemon juice
- 2 tablespoons minced onions
- 1 tablespoon Bourbon (I use Knob Creek)
- 1⁄4 teaspoon cayenne pepper
directions
- Combine water, pineapple juice, Worcestershire sauce, soy sauce, and brown sugar in a saucepan over medium heat.
- Stir occasionally until mixture boils; then reduce heat and simmer.
- Squeeze the 1/2 head of garlic into the mixture; discard skins and whisk garlic to combine (little chunks are okay).
- Add lemon juice, onion, bourbon and cayenne pepper; simmer for about an hour or until sauce is syrupy and reduced.
- Be sure not to boil over.
- This is wonderful on grilled foods, but can also be used in the oven.
- Baste food with sauce every ten minutes or so at the end of baking.
