Hot, tasty and a tickle of acid. I really like this recipe.
- 4 chicken breasts, small
- 4 teaspoons capers
- 4 teaspoons ginger
- 2 teaspoons black pepper
- 1⁄2 teaspoon Tabasco sauce (optional, and you can modify the amount to taste)
- 3 teaspoons rum, old
- 1 dash olive oil, for serving
- Fry the chicken breasts.
- While frying, mix the rum, the ginger, the pepper and the tobasco and add slowly.
- Once fried, serve in a plate with the capers and olive oil on top.
I really liked this peppery dish! I was really suprised how simple is was at the end of a hard day. Next time I think that I will stir fry red peppers, mangos, and snow peas to add some veggies and some sweet to balance with the spice. Thanks for posting this recipe.
