A recipe I received from a friend of mine who did a little experimenting on making scrambled eggs in the microwave. Ended up being a really good recipe
- Beat eggs well.
- Add milk, salt and pepper.
- Stir in diced onion.
- Place in microwave save dish and cook on high for 2 minutes.
- Stop and stir.
- Cook 1 1/2-2 minutes longer on high.
Great way to cook eggs in a hurry. I used skin milk and did 2 eggs for 35 seconds each round. *Make sure to use a bowl/dish large enough to handle the eggs expanding about 50% in size during the cooking process!
Instead of milk, I used a tablespoon of butter (I eat low carb, so my diet allows me to stay thin even while enjoying butter). It made the eggs very tasty. I eat eggs almost every day and am so happy to have a delicious way to cook them without a pan! Thanks!
Turned out great. I didn't have high hopes as I've tried making scrambled eggs in the microwave before that they've never been very good. These turned out fluffy and light and I loved the onion. I would never have thought to do that but it was really tasty. I used two eggs, two teaspoons of cottage cheese and microwaved them at 70% for 1.5 minutes, gave them a stir and then back in for another minute at 70%. They were just were perfect wrapped in a tortilla with a little hot sauce and cheese. Thanks for sharing the recipe.
