Jello Instant Pudding and Soy Milk

- 1 1⁄2 cups soymilk
- 1 package jello instant pudding mix
directions
- 1. Heat soy milk to about 160 to 170. Just under boiling is fine.
- 2. Follow directions on back of box.
- You should see your pudding start to thicken as soon as you add in the powder. I used Jello Sugar and fat free chocolate pudding mix and pistachio pudding mix.

This recipe worked perfectly! <br/><br/>I made one batch, using 1 1/2 cups soy milk (heated to 150F on the stove) and one 3.9 oz box of Jello brand chocolate pudding mix. It thickened in minutes!<br/><br/>I had previously tried to use soy milk per the box instructions & it never thickened, glad I found this recipe!

I haven't made the pudding but I have used this in cakes guys. If you want to leave out the thickener most pudding mixes have thickener in them. Just heat the milk to almost boiling along with the jello and put in a cake which is what I did. Wisk all the while, so it doesn't scorch and lump I used very little Jello actually, about half the box today.
