Jeanne's Green Beans, Corn and Cherry Tomato Salad

ingredients
- 1 lb green beans, trimmed and cut into 2 inch pieces
- 1⁄4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 small shallot, minced
- 1 garlic clove, minced
- 2 teaspoons fresh thyme
- 2 ears sweet white corn
- 1 pint cherry tomatoes, cut in half
- salt
- pepper
directions
- Lightly steam the green beans and the corn. Remove corn from cob.
- Whisk together the oil and vinegar.
- Add shallot and garlic, salt and pepper.
- Combine green beans, corn, tomatoes and gently add the dressing.

My little house is overflowing with cookbooks, thank goodness I found Recipezaar! I can collect all the recipes I want! I live in Fort Worth, Texas close to my two grown kids and four grandchildren. We love to visit Costa Rica. This is a picture of my whole family over spring break.I'm the big momma in the back. We went to Costa Rica and had such a great trip. We are now importing Costa Rica coffee. <br />I enjoy baking with my granddaughters. We like to make cookies and cupcakes.
