  • 1 medium sweet potato, peeled and cut into matchstick sized pieces
  • 2 (453.59 g) can tropical fruit salad, drained
  • 29.58 ml honey
  • 2.46 ml ground ginger
  • 2.46 ml cinnamon
  • 1.23 ml salt
  • 4 (453.59 g) boneless pork chops (trimmed of all visible fat)
  • 14.79-44.37 ml carribean caribbean jerk seasoning
  • 29.58 ml steak sauce

  • Preheat oven to 400 degrees.
  • In a large mixing bowl, combine sweet potatoes, fruit, honey, ginger, cinnamon and salt.
  • Lay foil sheets on workspace.
  • Divide sweet potato mixture including juices, evenly onto foil squares.
  • Spread jerk seasoning onto a plate.
  • Brush pork chops on both sides with steak sauce, then roll in jerk seasoning.
  • (For milder chops, sprinkle with jerk seasoning.) Lay pork chops on sweet potato mixture.
  • Seal foil packets well.
  • Place on a baking sheet.
  • Bake for 30-35 minutes, or until sweet potatoes are tender and pork is cooked throughout.

  1. Very good recipe. I did find that rolling the pork in the jerk was too much. Sprinkling them with the seasoning was just perfect. My DH requested this recipe for the next dinner! Thanks a lot for a low fat good tasting recipe!

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
