Irish Cream Fudge

"This delicious treat makes a great gift and family dessert. This recipe makes about 5 pounds of fudge. You wouldn't believe how much people loved this fudge. I have requests for it alot but is rather expensive to make and makes alot but is so easy to make. You can use any kind of Irish Cream you choose. Also nuts are optional and if you choose to add them, any type your like will work well with this recipe."

directions

 • In a very large bowl, combine the 2 packages of milk chocolate chips, the one package of semisweet chocolate chips, both jars of marshmallow cream, 2 teaspoons of vanilla extract, the Irish Cream, and nuts if you are adding them.
 • Set this mixture aside.
 • Line a 10-x-15-inch pan with foil and spread lightly with butter or margarine.
 • In a medium sized saucepan, combine 4 1/2 cups of granulated sugar, 1 can of evaporated milk, and 1/2 pound of butter.
 • Bring to a gentle boil over medium heat first and then cook slowly, stirring constantly for about 10 minutes.
 • Pour the milk mixture into the very large bowl holding the chocolate chip mixture.
 • Stir slowly by hand to combine.
 • It is very important to do this by hand and NOT use any kind of mixer.
 • Pour the fudge into the prepared pan and chill until set.

Questions & Replies

 1. I make this every year for Christmas and everyone looks forward to getting it. Best fudge! Always turns out! I just wondered if anyone has halved it and if so how long did they boil it, 6 min? I made 1 batch, I just don't need another 5 pounds worth.

 2. Can't wait to make the Irish creme fudge... Is the 10x15 pan, a cookie pan??? Thanks

 3. Can you freeze this fudge

 1. Oh my gosh, this was, by far, the very BEST fudge I have ever made (or tasted). The mix of the two different chocolate chips and the addition of the Irish Cream made for a delectably chocolately fudge taste. And the texture is so smooth and creamy and not dense like some of the richer fudge recipes I've tried. It makes quite a large batch, so it will come in handy at Christmastime when I have so many treat boxes to fill. But I would consider making a smaller batch(which I'm sure will still give me a decent sized platter of fudge) when I need something to make for bake sales or for enjoying at home. Thanks for sharing your recipe, lazyme. It's truly a "keeper" for me.

 2. "Fantastic fudge" and other rave reviews is all I heard when I used 2 cups of chopped pecans, 24 oz. of Semisweet Morsels and 12 oz. of Nestle's Dark Chocolate Chips instead of as in the original recipe. (Note: I had to use two ounces of dark chocolate chips from another 10 oz. bag since that's how Nestle's sells them nowadays.) Ease in making, color, appearance, consistency, no fuss setting & cutting, and TASTE were perfect!

 3. I used this recipe to make fudge for a Cookie exchange with my girlfriends. Unfortunately, I misread the recipe and only used one jar of marshmallow cream instead of two so my fudge came out too soft. I don't know if it was the cream or if maybe I didn't cook it long enough.

Regardless, this recipe taste fantastic which is why I still gave it 5 stars. This recipe, when done right, is perfect for Christmas! I will be recycling the mixture in the morning to make brownies though ;-) hope the girls will like!.
